Chocolate Almond Butter Chickpea Brownies

Chickpeas in a dessert? I know, weird. I was skeptical too until I tried them. You would have NO IDEA that there are beans in this. I made these for a friends birthday yesterday, and seriously no one could tell that these were not made from your typical baking ingredients.

These brownies are so moist on the inside, and are perfectly chocolaty and sweet. Perfect for satisfying your sweet tooth, but without any refined sugar! As I have shared before, I love me some sugar. But, I like to try these things out because I also love natural sugars-like maple syrup for example! Not to mention these bites of heaven have much more fiber and protein than regular brownies. Nutrient dense desserts sound like a plus to me!
Don’t knock it until you try it!

Ingredients:
1 can chickpeas, rinsed and drained
1/2 cup almond butter (or your favorite nut butter)
1/3 cup maple syrup (or honey if not vegan)
1/4 cup gluten-free oat flour
2 T cocoa powder
2 tsp vanilla
1/4 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1/3 cup dark chocolate chunks
Directions:
Preheat oven to 350. Spray an 8×8 cooking pan with oil and set aside. Add all ingredients (except chocolate chunks!) to a food processor and blend until smooth and creamy. The batter will be thick. Stir in chocolate chips. Pour batter into pan and add a few chocolate chunks to the top. Bake ~20-24 minutes. Allow to cool on cooling rack before serving.
